Damit jedoch alle Vorz\u00fcge, die mit ihr verbunden werden, auch in vollem Umfang genossen werden k\u00f6nnen, ist es wichtig, darauf zu achten, dass kein N\u00e4hrstoffmangel entsteht.<\/p>\n\n\n\n<p>Im ersten Schritt gilt es daher, m\u00f6glichst ausgewogen und abwechslungsreich zu essen. Ein besonderer Fokus sollte hierbei auf dem Konsum von Omega-3-Fetts\u00e4uren, Proteinen, B12, Jod, Zink und Eisen liegen.<\/p>\n\n\n\n<p>Mit diesem Wissen (und den passenden Rezepten) im Hinterkopf, wird das Kochen in der vegetarischen K\u00fcche oft noch ein wenig abwechslungsreicher. Doch welche Lebensmittel stecken eigentlich hinter den erw\u00e4hnten N\u00e4hrstoffen? Und was bewirken sie im K\u00f6rper?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Omega-3-Fetts\u00e4uren<\/h2>\n\n\n\n<p>Menschen, die sich omnivor ern\u00e4hren, beziehen einen Gro\u00dfteil ihrer Omega-3-Fetts\u00e4uren aus Fisch. Die entsprechenden Gerichte fallen bei Vegetariern aus dem Speiseplan heraus. Wer hier ausgleichen m\u00f6chte, sollte aus einen ausgewogenen Mix aus N\u00fcssen, Samen und verschiedenen \u00d6len setzen. Besonders beliebt sind in diesem Zusammenhang Erdn\u00fcsse, Waln\u00fcsse und Lein\u00f6l. Omega-3-Fetts\u00e4uren stecken jedoch auch in \u201eSuperfood\u201c, wie zum Beispiel Chia-Samen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Proteine<\/h2>\n\n\n\n<p>Wer an Proteine denkt, denkt oft unweigerlich an Fleisch. Es gibt jedoch noch viele weitere Lebensmittel, die dabei helfen k\u00f6nnen, den entsprechenden Bedarf zu decken. Im Gegensatz zu <a href=\"https:\/\/www.lidl-kochen.de\/kochideen\/vegan\/\" data-internallinksmanager029f6b8e52c=\"1\" title=\"Vegane Ern\u00e4hrung\">vegan<\/a> lebenden Menschen k\u00f6nnen Vegetarier hier unter anderem auch auf Milch und Eier setzen. class=\"wp-block-heading\">Eisen<\/h2>\n\n\n\n<p>Auch im Zusammenhang mit einer angestrebten Deckung des Eisenbedarfs lohnt es sich, auf H\u00fclsenfr\u00fcchte in verschiedenen Varianten zu setzen. Zudem ist Eisen auch in verschiedenen Vollkornprodukten und in \u00d6lsamen enthalten. Der Effekt kann noch weiter verst\u00e4rkt werden, wenn die erw\u00e4hnten Lebensmittel mit Vitamin C-Quellen kombiniert werden.<\/p>\n\n\n\n<p>Selbstverst\u00e4ndlich kann \u2013 trotz aller Vorsicht \u2013 immer ein Eisenmangel auftreten. Am besten ist es, diesen Wert in regelm\u00e4\u00dfigen Abst\u00e4nden beim Arzt kontrollieren zu lassen. Aber: eine Mangelerscheinung dieser Art kommt nat\u00fcrlich auch oft bei omnivor lebenden Menschen vor. Daher ist eine entsprechende Kontrolle \u2013 unabh\u00e4ngig vom jeweiligen Ern\u00e4hrungsstil \u2013 ohnehin ratsam.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Zink<\/h2>\n\n\n\n<p>Ein Zinkmangel ist bei Vegetariern eher selten. Dies liegt daran, dass viele Menschen, die auf Fisch und Fleisch verzichten unter anderem verst\u00e4rkt auf N\u00fcsse und H\u00fclsenfr\u00fcchte setzen. In diesen Snacks ist oft viel Zink enthalten.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Jod<\/h2>\n\n\n\n<p>Jod gilt als wichtiges Spurenelement, wenn es darum geht, die Funktion der Schilddr\u00fcse zu unterst\u00fctzen. Vegetarier, die auch auf Fisch, Meeresfr\u00fcchte und Co. verzichten, sollten beim Kochen bzw. bei der Zubereitung von Speisen auf jodiertes Speisesalz setzen.<\/p>\n\n\n\n<p>Zudem beinhalten auch viele Milchprodukte eine gr\u00f6\u00dfere Menge Jod. Wer Probleme mit seiner Schilddr\u00fcse hat, sollte unbedingt \u2013 vor einer etwaigen Ern\u00e4hrungsumstellung \u2013 mit seinem behandelnden Arzt sprechen.<\/p>\n\n\n\t\t<div Dieses ist unter anderem in verschiedenen Milchprodukten, jedoch auch in Pilzen, Butter und Eiern enthalten. Vitamin B12 kommt hingegen nur in tierischen Lebensmitteln vor. Somit erkl\u00e4rt es sich von selbst, weshalb vegan lebende Menschen hier in jedem Fall supplementieren m\u00fcssen. Vegetarier k\u00f6nnen ihren Bedarf hingegen meist problemlos mit Eiern, Milch und Milchprodukten decken.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Fazit<\/h2>\n\n\n\n<p>Einem N\u00e4hr- und Mineralstoffmangel im Rahmen einer vegetarischen Ern\u00e4hrung vorzubeugen, muss nicht kompliziert sein. Im Gegenteil! Wer hier darauf achtet, abwechslungsreich zu kochen, schafft in der Regel eine gute Basis. Im Gegensatz zu veganen Ern\u00e4hrung muss im Zusammenhang mit der vegetarischen Ern\u00e4hrung nicht supplementiert werden.<\/p>\n\n\n\n<p>Dennoch ist es nat\u00fcrlich auch wichtig, nicht per se davon auszugehen, dass \u201evegetarisch\u201c immer auch mit \u201egesund\u201c gleichzusetzen ist.
