Wo bekommst du denn deine ganzen N\u00e4hrstoffe her?\u201c \u2013 Menschen, die vegan leben, kennen diese (und \u00e4hnliche) S\u00e4tze zur Gen\u00fcge. Hierbei ger\u00e4t jedoch immer wieder in Vergessenheit, dass auch diejenigen, die sich omnivor ern\u00e4hren, unter Mangelerscheinungen leiden k\u00f6nnen.<\/p>\n\n\n\n<p>Eine Frage bleibt dennoch: wie k\u00f6nnen es gerade Veganer und Veganerinnen schaffen, ihren kompletten N\u00e4hr- und Mineralstoffbedarf zu decken?<\/p>\n\n\n\n<p>Als Grundregel gilt, dass es wichtig ist, sich sowohl mit den empfohlenen Tagesmengen als auch mit den Lebensmitteln, die ihren Weg auf den (veganen) Speiseplan finden, auseinanderzusetzen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Welche N\u00e4hrstoffe gelten in der veganen Ern\u00e4hrung als \u201ekritisch\u201c?<\/h2>\n\n\n\n<p>Im ersten Schritt kann \u2013 aufgrund aktueller Erkenntnisse \u2013 festgehalten werden, dass ein Mensch nicht zwangsl\u00e4ufig tierische Produkte zu sich nehmen muss, um alle N\u00e4hrstoffe zuzuf\u00fchren. Es gibt jedoch einige N\u00e4hrstoffe, die hier als \u201ekritisch\u201c angesehen werden. \u201eKritisch\u201c bedeutet, dass auf die folgenden Nahrungsbestandteile und deren Konsum ein besonderer Fokus gelegt werden sollte \u2013 gerade dann, wenn auf Milch, K\u00e4se, Fisch, Fleisch und Co. verzichtet wird:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>die Vitamine B12, B2 und D<\/li><li>Jod<\/li><li>Zink<\/li><li>Selen<\/li><li>Omega-3-Fetts\u00e4uren<\/li><li>Eisen<\/li><li>Kalzium<\/li><li>Protein.<\/li><\/ul>\n\n\n\n<p>Interessanterweise konnten viele Umfragen aufzeigen, dass sich jedoch die meisten vegan lebenden Menschen ohnehin besonders detailliert mit ihrer Art der Ern\u00e4hrung und den N\u00e4hrstoffen in den Lebensmitteln auseinandersetzen. Wer hier seine Werte entsprechend regelm\u00e4\u00dfig kontrollieren l\u00e4sst, ist weitestgehend auf der sicheren Seite.<\/p>\n\n\n\t\t<div data-elementor-type=\"section\" data-elementor-id=\"437\" sind im Zusammenhang mit einer veganen Ern\u00e4hrung besonders wichtig?<\/h2>\n\n\n\n<p>Selbstverst\u00e4ndlich w\u00e4re es falsch, grunds\u00e4tzlich davon auszugehen, dass eine vegane Ern\u00e4hrung immer zwangsl\u00e4ufig auch gesund sei. Ein klassisches Beispiel? Wer ausschlie\u00dflich Pommes und veganen Schokokuchen isst, f\u00fchrt seinem K\u00f6rper nat\u00fcrlich nicht die N\u00e4hrstoffe zu, die er zum funktionieren braucht.<\/p>\n\n\n\n<p>Eine vegane Ern\u00e4hrung sollte vielmehr unter anderem auf einem Mix aus Obst und Gem\u00fcse, H\u00fclsenfr\u00fcchten, Getreideprodukten, Soja, N\u00fcssen und Omega-3-Fetts\u00e4uren, wie sie zum Beispiel in Oliven\u00f6l vorhanden sind, aufbauen.<\/p>\n\n\n\n<p>Doch Vorsicht! Vitamin B12 muss im Rahmen einer veganen Ern\u00e4hrung immer supplementiert werden! Hier ist es wichtig, am besten den Vitamin B12 Spiegel zun\u00e4chst messen zu lassen, um dann ein Erg\u00e4nzungsmittel zu finden, das ideal zu den entsprechenden Werten passt. Danach raten \u00c4rzte dazu, den B12 Spiegel in regelm\u00e4\u00dfigen Abst\u00e4nden, zum Beispiel einmal im Jahr, kontrollieren zu lassen. So kann ein Mangel meist fr\u00fchzeitig erkannt werden.<\/p>\n\n\n\n<p>Um auf Nummer Sicher zu gehen, empfiehlt es sich, sich mit dem Aufbau einer veganen Ern\u00e4hrungspyramide zu befassen. Diese gibt wertvolle Anhaltspunkte, wenn es darum geht, herauszufinden, welche Lebensmittel in welcher Menge konsumiert werden sollten.<\/p>\n\n\n\t\t<div data-elementor-type=\"section\"
