Doch was bedeutet dieses \u201eRuhen\u201c eigentlich genau?<\/p>\n\n\n\n<p>Und w\u00e4re es mit Hinblick auf den Geschmack falsch, komplett auf das Ruhen zu verzichten? Fest steht: die Meinungen zu diesem Thema gehen auseinander.<\/p>\n\n\n\n<p>W\u00e4hrend manche Steak-Liebhaber klare Verfechter des Ruhens sind, erkl\u00e4ren andere, dass besagter Ruhevorgang mit Hinblick auf das entsprechende Geschmackserlebnis vollkommen irrelevant w\u00e4re.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Was passiert beim Grillen mit dem Steak?<\/h2>\n\n\n\n<p>Um der Antwort auf die Frage \u201eSolle ein Steak nach dem Grillen ruhen?\u201c auf den Grund zu gehen, ist es sinnvoll, sich zu \u00fcberlegen, welchen Sinn ein entsprechendes Vorgehen haben k\u00f6nnte.<\/p>\n\n\n\n<p>Wird das Fleisch erhitzt, ziehen sich die Muskeln zusammen. Unter anderem sorgt dieser Vorgang daf\u00fcr, dass das Steak beim Grillen an Feuchtigkeit verliert, da diese austritt. Das bedeutet: je hei\u00dfer das Steak wird, desto mehr Feuchtigkeit tritt aus. Infolgedessen ist die Gefahr gro\u00df, dass das Fleisch im Allgemeinen zu trocken wird. Gerade an den R\u00e4ndern des Steaks trocknet das Fleisch dementsprechend oft aus.<\/p>\n\n\n\n<p>Um diesem Effekt vorzubeugen, raten viele Grillprofis dazu, das Fleisch kurz und scharf anzubraten.
